This is a very quick yet impressive starter dish, using great ingredients and no-fuss cooking. Hogget is nothing more than a mature lamb between the ages of one and two years. The fat is much sweeter than that of lamb and the flesh is darker and richer in appearance and taste. To my mind, hogget is the superior choice for those in the know!
