Ingredients

  • 1 litre double cream
  • 2 vanilla pods, split lengthways
  • 10 medium eggs beaten

Method

Preheat the oven to 110°C/225°F/gas mark ¼.

For the custard tart filling, bring the cream and vanilla to the boil in a saucepan to infuse. Put the beaten eggs and sugar in a bowl, and pour over the warm cream, stirring well. Push through a sieve into a bowl.
