Woodcock is one of the most prized game birds. They are notoriously difficult to shoot, because of their perfectly camouflaged feathers and their style of flight, twisting and turning over and around trees and hedges. Woodcock have the most beautifully flavoured flesh and, I think, should be handled with great respect and served in the traditional manner.
