It was quite fashionable in Victorian times, but salsify is a bit of a forgotten vegetable now. You could serve this as a starter on its own or to accompany a main course. In my opinion, it goes really well with most fish and I also like to use it like a crudité – to dip into the whole baked stinking bishop.
