The key thing here is the quality of the honeycomb and the blue cheese – get it right and they make a sublime combination.
Peel the pears. Mix the remaining ingredients except the honeycomb and blue cheese together in a suitably sized saucepan and bring to the boil. Add the pears and simmer for 20–30 minutes, depending on the ripeness of the fruit. Chill the pears in the cooking liquor.
Remove the pears, and serve them with a chunk of gooey honeycomb and a thick slice of good-quality, room-temperature blue
