Traditionally you would bake one of the famous Alpine cheeses like Vacherin, but Stinking Bishop is perfect for the job and so full of flavour, there’s no need to look further afield.

Ingredients

  • 1 small whole Stinking Bishop cheese in its box
  • a few sprigs of fresh rosemary or thyme
  • 3–4

Method

Preheat the oven to 200°C/400°F/gas mark 6.

Stud the whole cheese in its box with rosemary or thyme, then bake on a baking sheet in the preheated oven for 20 minutes
