Chilled Brandy Sauce

This quickly made, light and creamy sauce is an alternative to rum or brandy butter with the Christmas pudding - in fact, it’s delicious with almost any hot pudding.

Ingredients

  • ¼ pt (125 ml) double cream
  • 1 level tablespoon (15 ml spoon) icing sugar - sifted
  • 1-2 tablespoons (1-2 x 15 ml spoon) brandy

Method

Simply whisk the cream until thick, then whisk in the icing sugar and gradually stir in the brandy to taste. Chill in the refrigerator.
