During the summer tomato salads are incomparably improved by the addition of fresh basil, and chopped fresh mint is very good too. In mid-winter it is difficult to find fresh herbs, other than greenhouse parsley, but the sage bush struggles on without losing all its leaves.

Ingredients

  • 1-1½ lb (400-600 g) sliced tomatoes
  • good handful fresh sage leaves

Method

Get a good handful of leaves and chop them very finely before adding to a tomato salad. Dress with a French dressing just before serving.
