A quickly made curried sauce with a beautiful sheen to it and a refreshing flavour which will revive even the driest cold turkey.


  • 5 fl oz (125 ml) mayonnaise (a good bought kind will do)
  • 10 fl oz (250 ml) plain yoghurt
  • a little orange juice (to taste)
  • 1-3 teaspoons (1-3 x 5 ml spoon) curry powder
  • a little tomato purée (optional)
  • salt


Mix the mayonnaise and yoghurt smoothly together. Stir in the orange juice, curry powder, tomato purée and salt to taste. Either spread the sauce over a dish of carved, cold turkey or put out in a bowl for people to spoon on to their plates.
