A quickly made curried sauce with a beautiful sheen to it and a refreshing flavour which will revive even the driest cold turkey.
Mix the mayonnaise and yoghurt smoothly together. Stir in the orange juice, curry powder, tomato purée and salt to taste. Either spread the sauce over a dish of carved, cold turkey or put out in a bowl for people to spoon on to their plates.
