This is a fine, inexpensive way to serve a lot of people. I received this recipe from Gladys Glaude of Carencro, Louisiana, who patiently explained her ways with spices and gumbos, crayfish and dumplings. Mrs. Glaude and her sister Louella Williams are well-known Louisiana cooks. Louella Williams shared many recipes with me, including Green Enchiladas.
