Grilled Steaks with Black Coffee

I have one personal recipe for grilled steak:


  • a good fillet or rump steak for each person
  • 2 oz. (60 g.) butter
  • ½ pint (3 dl.) very strong, strained, cold black coffee
  • juice of half a lemon
  • 1 flat tablespoon cornflour
  • seasoning


Stir into the coffee a teaspoon of salt and a little pepper, and the juice of half a lemon. Marinate the steaks in this for 1 to 3 hours.

Take the steaks out. Spread a piece of softened butter on each and grill in the ordinary way, basting twice with the black coffee mixture. Boil the remainder of this, and thicken with the cornflour mixed into a little cold water.

Dish the steaks and quickly pour the thickened coffee mixture into the drip pan over heat and stir well for half a minute. Pour a little over the steaks and serve the rest separately.

The black coffee brings out the flavour of the meat and makes an inimitable gravy.
