  • ½ lb. (240 g.) self-raising flour
  • 6 oz. (180

Method

Mix the salt and pepper with the flour, and rub in the fat with the fingertips until the mixture looks like fine breadcrumbs. Add enough cold water to make a stiff paste. Roll out on a floured board, sprinkle with cheese, fold over, and repeat the process. Bake in oven, 400° F., gas mark 6.

Use for savoury tarts, flans or patties.
