Whole Potted Game

An eighteenth-century recipe. Birds prepared in this way will keep for weeks in a refrigerator and indefinitely in a freezer. They have a rich flavour and a quite outstanding consistency.

This recipe, like the preceding one, is very close to Sir Kenelm Digby’s (of 100 years earlier) entitled ‘To Bake Pidgeons (which are thus excellent and will keep a quarter of a year) or Teals or Wild Ducks’.
