Method

A traditional recipe for potting salmon, which was very important when there was a glut as the salmon came up the rivers. Nowadays salmon is an expensive luxury but if you have some cold salmon left over after a summer lunch or dinner, it can be pounded and potted, or if you catch or are given a whole salmon you may have a surplus which you will be glad to preserve.
