Mrs Glasse’s recipe of 1747 says this is ‘A good dish for a great deal of company’. The flavours of the chicken and the tongues are very good together, and the white cauliflower and chicken, red tongues and bright green spinach or broccoli look very gay, partly masked with the creamy sauce. Colour in food was given great importance from the Middle Ages to the nineteenth century.
