This is adapted from Mrs Glasse’s ‘To dress a Duck with Cucumbers’, 1747.


  • a pair of ducks
  • 3 cucumbers
  • 2 large onions, peeled and sliced


First peel the cucumbers, cut in halves lengthways, remove pips and cut the remainder into ½-inch (1-cm.) cubes. Mix them with the onions, pour the claret over and leave them to marinate for 2 hours.
