The birds need not be quite young, though they must not be old and stringy.

2 wild ducks, a partridge and a pigeon, etc. may be used together if you are using birds from a shoot and want to feed 6 or 8 people. I wild duck and 1 pheasant or 2 partridges, if you are buying from a poulterer, will be enough for 4 or 5.
