  • a piece of middle-cut salmon, about 1½-2 lb. (¾-1 k.)

Method

Butter a large sheet of foil. Dust the salmon with flour, pepper and salt, and lay on the foil. Put the tarragon and bay leaf on it and dot with the rest of the butter. Wrap into a close parcel. Lay on a baking tray and bake for 30–35 minutes at 350° F., gas mark 4. Open the parcel a little and try w
