  • 2 oz. (60 g.) butter

Put the butter in a bowl. Add the chopped herbs (the spinach leaf gives green colour). With a wooden spoon beat them until the butter is soft and the herbs evenly worked into it.

Make into pats or balls to serve, and chill a little. Very good with plain grilled steaks, or with potatoes which are to accompany cold meat.
