Method

Pound the yolks into the cream, and then mix all ingredients well together.

Dr Kitchiner gives 3 tablespoons of vinegar, which is much too much, but with 1 the dressing is excellent. He also gives water as an alternative to cream, melted butter to olive oil and sugar to salt
