Sir Kenelm Digby* tells us that the Queen drank the following simple chicken broth every morning in order to keep her good health.


  • 1Brawny Hen or Young Cock
  • 1 handful of parsley
  • 1 sprig


All these were put in as much water as would cover them – probably a little more than a quart (1 l.) – and boiled until they were reduced to ‘less than a Pint for one good porringerful’.
