  • 1 lb. (½ k.) haricot beans, soaked overnight

Method

Put the beans into a pan of water, bring to the boil and boil for 3 minutes. Strain into a deep pot with all the other ingredients. Fill the pot with water just to cover the beans. Cover closely and cook all night or at least 4 hours at 250° F., gas mark ½.

Half water, half cider, gives the beans a delicious flavour.
