Put the cauliflower into enough boiling salted water to come about half-way up the vegetable. Put on the lid and cook 20–30 minutes according to size. It should be tender but still firm. Meanwhile, make your cheese sauce. Butter a fireproof dish or individual dishes and arrange the cauliflower, broken carefully into sections. Pour over the hot cheese sauce.
