Wash the leeks well and cut them in half lengthwise, being careful to remove all grit. Butter a fireproof dish, arrange the leeks in it, season them with salt and pepper, and pour over the stock. Dot them with butter, cover tightly and bake in a hot oven, 400° F., gas mark 6, for 20 minutes. Uncover and allow to brown slightly for a further 5 minutes.
