Blanch the tomatoes, slice them, and place in a well-buttered fireproof dish, sprinkle with salt, pepper and a little sugar, cover the top with breadcrumbs and sprinkle with grated cheese. Cook in a moderate oven, 350° F., gas mark 4, for 20 minutes, then brown the top quickly under a hot grill just before serving.
