  • juice of 2 oranges and the rind of 1, finely grated

Method

Stew the peeled turnips in the orange juice mixed with enough water to cover them. Add half a teaspoon of salt. When tender (about 25 minutes), drain and put them whole in a buttered dish. Put a dab of butter on each and sprinkle all over with the grated orange peel and some coarse black pepper.
