‘Invert a china basin or small dish on a larger one.

‘Lay out in circles to cover the large dish and the sides and top of the inverted bowl:

Ingredients

  • ‘chopped white chicken meat or veal
  • chopped yolks of 4 or 5 eggs
  • chopped whites of 4

Method

Decorate the top of the inverted dish with worked butter or with sprigs of parsley.’
