Fry the sausages and all the vegetables and herbs gently in butter or oil. Transfer to a large flat fireproof dish, sprinkle with salt and pepper and flatten the surface. Carefully break 2 eggs per person on top of the mixture, so that it is covered with eggs. Sprinkle with grated cheese and dot with pieces of butter. Put in a hot oven, 450
