English recipes through the ages claim that to make a good omelette (which Mrs Glasse spells amulet and makes with beans) it is wise to:


  • beat egg yolks and whites separately
  • add water
  • add milk
  • add cream
  • beat eggs whole but very foamy h


You can, in fact, do any or all of these things and you will still make a good omelette provided that you have a thick heavy pan and that you make it very hot.
