Method

Prepare the eggs as for an ordinary omelette but without salt and adding a teaspoon of caster sugar. Just before folding the omelette in the pan put in a layer of whatever jam you like. Fold in the usual way and dish the omelette in a fireproof dish. Sprinkle with caster sugar and glaze it quickly under a hot grill.
