Coating batters are used for dipping fillets of fish or meat, minced mixtures or fruit or vegetables. It is best to deep-fry batter-coated food in oil, but other fats can be used and the food can be shallow-fried. Coating batters are used for all fritters, for which various recipes and suggestions follow.
