  • 1 slice of toast per person
  • 2 oz. (60 g.) cheese per person

Method

Grate the cheese – use Cheddar or Cheshire. Melt the butter in a small thick saucepan, stir in the cheese with a teaspoon of made mustard and the seasoning. Stir over gentle heat until the cheese melts. This mixture may be spread on hot toast and toasted under the grill as it is or an egg yolk may be stirred in to bind. A tablespoon of beer may also be stirred in before grilling. Serve very hot
