Sultana or Raisin Pudding


  • 2 oz. (60 g.) sugar
  • 3 oz. (90 g.) self-raising flour
  • ½ level teaspoon baking powder
  • 3 oz. (90 g.) fresh breadcrumbs
  • 3 oz. (90 g.) chopped suet
  • 2 oz. (60 g.) sultanas or raisins
  • 1 egg
  • ¼ pint ( dl.) milk
  • grated rind of ½ lemon


Mix the sugar, flour and baking powder together and stir in breadcrumbs, suet, and prepared fruit. Mix with beaten egg and milk, adding lemon. Pour into a greased 1-pint (6-dl.) basin and cover with greased paper or foil. Steam for 1½ hours.

For a Steamed Jam Pudding, use the same mixture without the fruit. Put 2 tablespoons of jam in the greased basin, and pour the pudding mixture on top of it. Turn out when cooked and serve with jam sauce.
