Lemon Syllabubs (1741)


  • 1 pint (6 dl.) double cream
  • ¼ lb. (120 g.) sugar
  • pint ( dl.) white wine
  • juice of 2 lemons, and grated rind of 1


Put all these together and beat as fast as you can till the mixture is thick. Then pour it into glasses and let it stand for 5 or 6 hours: it can be made overnight, and with a blender it takes only 2 minutes to make.
