Devilled Ham Toasts


  • 2 oz. (60 g.) finely minced lean cooked ham
  • 2 teaspoons Worcester sauce
  • a pinch of cayenne
  • ½ tablespoon French mustard
  • ½ oz. (15 g.) butter
  • 4 circles of well-buttered toast each 2 in. (5 cm.) in diameter
  • 1 tablespoon finely chopped parsley


Thoroughly mix the ham, Worcester sauce, cayenne and mustard. Melt the butter in a small saucepan and stir the mixture into it, stirring until it is very hot. Pile on to the circles of toast, sprinkle with parsley and serve immediately.
