It’s as if I’ve been programmed: the minute I know people are coming for supper, I start cutting up a butternut squash. It’s a rare day in my kitchen that I don’t have one to hand; they keep for ages, and so it makes sense to be prepared. Butternut is easy to cook, and there are many ways its sweet orange flesh can be further enhanced to create side dishes that taste wonderful and look beautiful.
