Name: No-Knead Black Bread
Yield: Makes 1 large loaf
Ingredients: 4 teaspoons caraway seeds; 4 teaspoons fennel seeds; Oil, for greasing the loaf tin; 1¼ teaspoons fine sea salt; 4 teaspoons nigella seeds, plus 1 teaspoon for the top of the loaf later; 1 teaspoon activated charcoal (optional; see recipe intro); ¼ teaspoon (1 g, but it’s hard to get it to register on the scales) fast-action dried yeast; 300 g strong white bread flour; 2 x 15 ml tablespoons extra-virgin olive oil; 2 x 15 ml tablespoons black treacle; 300 g dark rye flour; 1 x 500 ml bottle of Guinness or other dry dark stout, opened in advance if possible; 4 x 15 ml tablespoons (25 g) cocoa; 1 large egg, at room temperature; 2 x 15 ml tablespoons (30 g) dark muscovado sugar

Sometimes I can get so fixated on a recipe that I find it hard to step away when, even after repeated testing and retesting, what I’m looking for continues to elude me. I’m glad that I persisted here, where more reasonable people would long since have given up, as I have finally created the dark, treacly bread I had hitherto only imagined and obsessed over.

The thing that made me persist is that I had got the taste right straightaway; the properly dense and chewy – but not too dense
