This vinaigrette is lovely on vegetables and greens. The acidity of the lime juice or vinegar causes the cream to thicken to just the right consistency.


  • 3 tablespoons fresh lime juice or red or white wine vinegar or sherry wine vinegar
  • ½ teaspoon


In a small bowl, whisk together the lime juice, salt, and pepper to taste. Whisk in the cream and herbs. Let the herbs infuse in the sauce for at least 20 minutes before serving.
