Method

Bring enough water to a boil to cover the lobster(s) and throw in a handful of salt. Kill the lobster(s) first with the knife technique (see right), if decapitation seems more humane to you than dropping the live lobster(s) into the boiling water. Immerse the lobster(s) in the water (if cooking more than one, add them all at once), and boil until bright orange, 5 minutes for ¼- to 1½-pound lobs
