Perfect for a feast, the secret to success of this country ham is the long soaking.
Soak the ham in cold water to cover for 2 days, changing the water twice a day. (Or, follow the directions that come with the ham.) Put it in a pot with cold water to cover and bring the water to a simmer. Simmer for 5 minutes and drain off the water. Add more cold water to cover, the juniper, and the bouquet garni, and bring to a gentle simmer over high heat. Lower the heat so that a bubble or
