To steam or boil broccoli, cut it first into little bouquets by separating the florets from the stems. While there are those who insist steamed broccoli has more vitamins, it’s virtually impossible to calculate the nutritional difference between steamed and boiled broccoli. Once cooked, broccoli can be tossed with cold butter or topped with a sauce such as hollandaise.
