The trick to good buttered string beans is to drain them thoroughly or just take them out of the steamer and toss them in a bowl for a few seconds so the moisture clinging to them evaporates. Thin slices of cold butter should then be tossed with the beans, and not over any heat, or the butter will turn oily and greasy. Makes 4 side-dish servings
