Leeks have such a special finesse and flavor that, unlike other members of the onion family, merit being served on their own. Try just cooking them in boiling water or with steam and serving them hot with butter, olive oil, or a sauce, or serve them cold, tossed with vinaigrette. Makes 4 first-course or side-dish servings
