One of the simplest dinners is a roast surrounded with root vegetables. The vegetables get coated with the juices and fat from the roast, and when all goes well, they lightly caramelize. If you are not making a roast, you can still roast root vegetables. You just have to coat them with fat, such as butter or oil, to keep them from drying out.
