If you find yourself with leftover mashed potatoes or baked potatoes, just work in a little egg, season with salt and pepper, shape the mixture into patties, and cook gently in butter for 3 to 5 minutes on each side. If you are starting from scratch, boil the potatoes and combine them with the egg and some chives.
Put the potatoes into a pot and add water to reach halfway up their sides. Cover the pot, bring to a simmer, and simmer gently for about 30 minutes, or until the potatoes are falling apart. Check the potatoes every 10 minutes to make sure the water is not running dry, and if it threatens to, add a little more.
