Because these potatoes are so thin, they cook within a minute or two of being dropped in hot oil. Start by cooking just a few sticks and diagnosing any problems, so you can adjust the temperature of the oil accordingly. If the potatoes brown quickly but are limp and soggy when you bite into one, the oil is too hot. If the potatoes are greasy and/or dry, the oil isn’t hot enough.
