When grilling zucchini, fire up your largest grill. It takes up a lot of room. It is best to slice zucchini lengthwise, as round slices are harder to turn and can slip through grill racks.
The trick to tasty grilled zucchini is to cook it until it is a pronounced brown, almost burnt. A preliminary marinating with oil and herbs also contributes flavor.
