You can give your mayonnaise a green hue by using Maille brand herb mustard, which is green, or you can extract the chlorophyll from spinach and use it.

Ingredients

  • 3 cups tightly packed spinach leaves (from about 10 ounces spinach leaves, typically the size of bags of prewashed leaves)

Method

In a blender, combine the spinach and water and puree for 1 minute. Strain through a strainer lined with a triple layer of cheesecloth held over a small saucepan. Discard the contents of the strainer. Line the strainer with a coffee filter or a paper towel and set aside.

Place the saucepan over medium heat and heat, watching closely, for about 2 minutes, or until the green in the liquid
