A citronette is a vinaigrette in which the vinegar has been replaced with lemon, lime, or other citrus juice. You can make a citronette by just substituting lime juice for the vinegar in a basic vinaigrette, or you can make this creamy version, in which heavy cream replaces the oil. The acidity in the lime juice thickens the cream, so the mustard, which is no longer needed as an emulsifier, is optional. Citronette is particularly good on hot fish.
