Name: Barbecue Sauce

Ingredients: 1-inch-fresh ginger, minced; 1 large clove garlic, minced, and then crushed to a paste with the flat side of the knife; 2 cups ketchup; 1 chipotle chile, soaked in hot water for 30 minutes to soften, if dried or rinsed if canned, seeded and minced; ¼ cup light brown sugar; ¼ Worcestershire sauce; ¼ cup soy sauce

Method

In a bowl, combine all the ingredients, stir well, and let stand at room temperature for 1 hour before using. Store in the refrigerator.
